Skillet Meatball Marinara

meatballsWhile catching up on my favorite blogger, the Londoner, I came across a meal inspiration she posted from Italy. Meatball Marinara. My mouth watering and mind racing, mentally scanning my cupboards to see if I have the all necessary ingredients for this scrumptious dish, I was delighted to find that not only did I have all the ingredients but also that I would be using the rest of my homemade marinara sauce!

As always, I jumped on Pinterest to scour through recipes for skillet meatball marinara, and boy are there a lot!

Below is my tweaked recipe including the steps for the marinara sauce and my slightly original meatball recipe. If you want to save time, feel free to use store bought marinara and frozen meatballs. I’m sure it will taste great! …But not as good as homemade.

Enjoy!

Ingredients:

Sauce

  • 4 Tomatoes
  • 1 can Tomato Paste
  • 1 half Onion, chopped
  • 5 cloves garlic, minced
  • 1 teaspoon Red Chili powder
  • 1 teaspoon Oregano
  • 1 tablespoon Basil
  • 1 teaspoon Sugar
  • 2 tablespoons Salt
  • 1 teaspoon Pepper
  • 1/4 cup olive oil

Meatballs

  • 1 lb ground beef, (or Turkey… or chicken)
  • 2 Eggs
  • 1 cup Breadcrumbs
  • 1 tablespoon Italian Seasoning
  • 1/3 cup shredded Parmesan cheese
  • 2 tablespoons whole Milk
  • 1 tablespoon Salt

Final touch

  • 5 slices of Mozzarella

Sauce

  1. Take tomatoes (chopped) and chopped onions and blend thoroughly.
  2. Pour olive oil into large pot and fry garlic till it starts to turn brown.
  3. Pour blended tomatoes and onions into pot and add tomato paste.
  4. Add in chili powder, oregano, basil, sugar, salt and pepper and bring to boil.
  5. Reduce heat and let simmer until it is a rich red color. Stir occasionally. Warning: this is a spicier sauce so if you are not a spice lover like us then leave out the chili powder. Also, as I make my marinara, I am constantly tasting it and adding a pinch of this and that. Don’t be afraid to make it your own.

Meatballs

  1. In a large mixing bowl, put ground beef, eggs, breadcrumbs, Italian seasoning, Parmesan, milk and salt.
  2. Mix ingredients together until even. If you aren’t squeamish, mix it with your hands! So fun!
  3. Roll into balls larger than golf ball size.
  4. Put oil in large skillet.
  5. Space meatballs evenly and brown for 4 minutes.
  6. Pour marinara into skillet and let simmer for 20 minutes.
  7. Put slices of mozzarella cheese on top of the meatballs (I also sprinkled some shredded Parmesan cheese), cover and let sit until cheese is melted.

Et voila! Bon Appetit!
