  1. Heat the oil in a heavy based saucepan and add the chopped onion. Cook until translucent.
  2. Add the garlic
  3. Mix the spices in a small bowl with a little water, to prevent them burning, and add.
  4. Add the butter beans, cashew nuts and spinach and stir to mix.
  5. Add the tomatoes and stock cube. Bring to the boil and then simmer while the rice cooks
Mushroom Pilau
  1. Fry the onion in the oil until translucent
  2. Add the rice and grated mushrooms and gently cook for a minute or so.
  3. Add the stock cube to the boiling water and pour over the rice.
  4. Cover the saucepan with a lid and simmer for about 20 mins until cooked.
  5. Serve and garnish with chopped mint.
