Thai Fried Rice
A simple light rice accompaniment to any Thai dish or on its own.
Ingredients
Instructions
  1. Heat oil in a wok until very hot.
  2. Add garlic and stir-fry for 20 seconds or until golden.
  3. Add pork and cook, stirring constantly, until all the pork has changed color completely, about 1 minute. (If using already cooked leftovers leave out and add at the end).
  4. Break up the rice and add to wok.
  5. Keep tossing the rice around wok with spatula until it stops sticking.
  6. Fry rice – allow it to become seared a little before tossing it each time. Do this for 30 seconds to a minute.
  7. Add cabbage and fish sauce and stir-fry for a minute.
  8. If using leftovers add them at the very last moment and toss them in.
  9. Turn out onto a plate and garnish with coriander, cucumber slices and a slice of lime or lemon.
Recipe Notes

Serve with a slice of lemon or lime and garnish with anything you like such as fresh coriander, cucumber batons and spring onion sliced lengthways.

Soya sauce and chill flakes can be served with this dish of an extra kick. Soya sauce heightens the intensity of chilli.
