  1. Basic version
  2. Peel and boil the potatoes until just soft in the middle
  3. Pour out the water and allow the potatoes to cool enough to handle.
  4. Chop the potatoes into 10 to 15 millimeter cubes (old school), or 5 mm slices (rustic) using a serrated knife.
  5. Heat a large frying pan on medium heat bringing the oil or fat to the sizzle.
  6. Add enough potatoes to the pan to be no more than one cube or slice deep.
  7. Here's the thing - don't stir the potatoes - shake the pan every so often or shuffle the potatoes to prevent sticking.
  8. When one side is golden turn the potatoes with a spatula and leave for a minute or two. If you are using olive oil now is the time to add the knob of butter to add flavour.
  9. Continue to turn occasionally until the potatoes are beautifully golden with a crispy surface.
  10. At the last minute before taking off the heat, throw in the sea salt and chopped herbs to your liking and toss the potatoes in the pan.
  11. For large quantities you may have to cook in batches. If you do put the finished potatoes on a baking tray and pop into a warm oven to keep crisp and hot.
Recipe Notes

Posh Version

  1. As above but boil new potatoes in their skins.
  2. Leave the skins on and slice into 5mm slices with a serrated knife.
  3. Add 1 tbsp olive oil and a small knob butter together in the pan and bring to the sizzle.
  4. Add the new potatoes and sprinkle one pinch of sea salt onto them before you turn them over.
  5. Turn the slices over and fry until golden.
  6. Pop onto a baking tray and place into a hot oven for 1 to 2 minutes.
  7. Sprinkle 1 more pinch of sea salt and optional chopped herbs before serving.
