  1. Mix the yeast, water and honey together, leave to froth.
  2. In a stand mixer or in a bowl, mix the flour, semolina, salt, olive oil and pumpkin seeds. Then add the yeast and water mixture.
  3. Using a dough hook mix on a low speed in your stand mixer for ten minutes. If mixing by hand, knead for a good 10 minutes.
  4. Then set aside in an oiled bowl, covered with a tea towel or cling film. Leave to rise for an hour in a warm place.
  5. Preheat the oven to 180ºc.
  6. Dice the butternut squash or pumpkin and toss it in olive oil, salt and all the spices.
  7. Roast the butternut squash and spice mixture on a baking tray for ten minutes until gently browned.
  8. Remove and let it cool.
  9. Wait for the dough to rise then combine the roasted butternut squash and combine. Add more flour at this point if it's too wet. But don't add too much - a wetter dough rises better.
  10. Set the oven to 200ºc.
  11. Oil or grease a bread tin put dough into it. Let it rise for half an hour.
  12. Bake for ten minutes.
  13. Reduce heat to 180ºc and bake for 40 minutes. If it sounds hollow when you tap it then it's ready.
  14. Leave to cool for five minutes then turn it out onto a rack to cool for ten minutes.
