  1. Mix the spring onions, carrot, chilli, apple and cabbage.
  2. Whisk together the lime juice, oil, ginger, sugar and sesame seeds. Pour the dressing over the salad and mix. Sprinkle with mint and season to taste.
  3. Heat the oven to. Brush the chops with a little oil and season with salt and pepper and roast at 220°C (gas mark 7) for 15 mins, turning once.
  4. Serve the chops hot with the coleslaw.
Recipe Notes

The coleslaw can be made and dressed an hour or so before you can cook the pork
