Instructions
  1. Melt butter in a large pan.
  2. Stir in the leeks.
  3. Cover and simmer for 7 minutes.
  4. Stir in the flour, while stirring add the stock and bring to the boil.
  5. Then simmer for a further 10 minutes.
  6. Ladle one quarter of the soup into a large jug and crumble this stilton cheese into it, gradually working it in until it is smooth.
  7. Return this cheesy mixture into the rest of the soup and heat without boiling.
Recipe Notes

Serve with crusty or garlic bread. Grate parmesan onto the top for extra cheesyness.
