  1. Wipe the cucumber and grate it.
  2. Transfer to a colander, cover with the sea salt and leave to drain.
  3. Put the curd cheese into a mixing bowl. Crumble the feta and add, along with the chervil, parsley and most of the chives.
  4. Add the garlic and a sprinkling of pepper. Stir in the white wine vinegar and mix thoroughly.
  5. Squeeze out the liquid from the cucumber and add to the cheese mix.
  6. Soak the muslin and put one in each dairy pot.
  7. Spoon in the paté and press down with a weight.
  8. Refrigerate for several hours or overnight.
  9. Serve with the Crusty bread, savoury biscuits or melba toast.
Melba toast.
  1. Toast slices of bread in a toaster.
  2. Meanwhile heat a grill.
  3. Carefully cut through the slices of toast with a serrated knife into 2 and gently toast the untoasted side under the grill. It will become crispy and ready to accompany the paté.
