Instructions
  1. Melt the butter or fat in a non-stick pan, allow it to get hot. As it browns, add the onion and garlic.
  2. Add the sliced sprouts or cabbage and let it colour slightly.
  3. Fry for about 5 minutes.
  4. 
Add the potato.
  5. Work everything together in the pan and push it down so that the mixture covers the base of the pan – allow the mixture to catch slightly on the base of the pan before turning it over and doing the same again.
  6. Don’t be afraid to let the potatoes brown to a golden colour. That’s what bubble and squeak is all about 🙂
  7. Cut into wedges and serve hot.

  • An interesting fact - Bubble and Squeak is the most traditional way of cooking with leftovers. Usually on Mondays, households have enjoyed this delicious dish for centuries as a way of using up the leftovers from the customary Sunday meal.
  • Bubble and squeak can be made with any leftover Vegetables and is too delicious for words - usually better than the food was first time around… So there’s no excuse for wasting leftovers - especially at Christmas or on Mondays!
  • Bubble and squeak makes a delicious breakfast with fried eggs and bacon or cooked smoked haddock and poached eggs.
