Instructions
  1. Heat oil in a large casserole pot over medium-high heat. Add the onion, season with salt, and fry until soft but not golden.
  2. Stir in the garlic, chile powder, cumin, and chipotle paste and fry for another 2 minutes.
  3. Add the tomatoes, stock, sweet potatoes, and a pinch of salt, and bring to a boil over high heat, about 5 minutes.
  4. Reduce the heat to low and stir in the beans, and simmer, partially covered, for about 30 to 40 minutes or until the liquid is slightly thickened and the potatoes soft.
  5. Squeeze in some lime and add a little more salt to taste.
Recipe Notes

Serve with crusty bread (or pitta bread), tortilla chips, rice, cheese, jalapeños, chipotle sauce - whatever floats your south Americana boat.
