I have a confession. I love, love, LOVE garlic. So, when I saw it combined with my other loves (cheese and carbs) I was all on board. This recipe is really simple and takes only about a half an hour. This recipe makes enough food for about 4 hungry people.
- 8 cloves of garlic (yes 8, trust me) minced
- 2 tablespoons of oil
- 4 cups of chicken broth
- 2 cups of whole milk
- 4 tablespoons of butter
- 1 lb of spaghetti, fettuccine or linguine
- 1/2 cups of parmesan cheese
- 2 tablespoons of chopped parsley
- salt and pepper to taste
First, in a large skillet, cook garlic in oil until fragrant (1-2 minutes). Be careful here, I look away for a second and they are burnt.

While catching up on my favorite blogger, the Londoner, I came across a meal inspiration she posted from Italy. Meatball Marinara. My mouth watering and mind racing, mentally scanning my cupboards to see if I have the all necessary ingredients for this scrumptious dish, I was delighted to find that not only did I have all the ingredients but also that I would be using the rest of my homemade marinara sauce!
As always, I jumped on Pinterest to scour through recipes for skillet meatball marinara, and boy are there a lot!
Below is my tweaked recipe including the steps for the marinara sauce and my slightly original meatball recipe. If you want to save time, feel free to use store bought marinara and frozen meatballs. I’m sure it will taste great! …But not as good as homemade.
